Home cooking
You can never go wrong with chicken noodle soup. It's good on cold, rainy days. It's good when you just want to stay inside and relax. It's easy to make at home, in college, etc. It's one of my favorite go-to meals.
For this meal, I typically use frozen chicken, egg noodles, chicken broth, carrots, onions, and mushrooms.
While the chicken is thawing out, I cut up my vegetables and boil them in water.
When the chicken is all thawed out, I'll cook it in a pan with oil, salt, pepper, thyme, basil, parsley, lemon juice, and celery flakes. Maybe I'll throw in some soy sauce, if I'm feeling in the mood for it.
Then, I heat up the broth, and add my vegetables and a little bit of the water from when I boiled them since it's more like clear vegetable juice, which gives it more of a healthy flavor.
I wait for it to boil and then add my noodles. When the chicken is done, I'll cut it up in strips or chunks and place them in the soup.
I add the same kind of seasonings as I did with the chicken, but this time, I also add this Italian oil to the soup. Only just a dash, and it gives it such a great, savory flavor.
Once the noodles are done, and everything has time to blend together, the soup is basically done! It's an easy, but also quick way to make soup, and still tastes like it's been simmering for a few hours.
Want some extra flavor? Use a ramen chicken seasoning packet as a base for broth. It's more flavorful.
In general, this is a salty, savory, and hearty dish, that I love making!
